Certainly, most of these big manor houses have accommodation for the bride and groom. But, some may also have a few extra bedrooms for guests. So, people can pay to stay over and enjoy a more immersive experience.
Now, there’s nothing wrong with picking a typical reception venue. Hotels are perfectly fine if they suit your needs.
